Simple No-Knead Artisan Bread (Dutch Oven)
This is one of those recipes that feels like you did something impressive, but it’s actually really simple.
I make this when I want something homemade without a lot of effort. You mix it, let it sit, and it turns out really good every time.
Ingredients
3 ¾ cups (450g) bread flour
2 ¼ teaspoons instant yeast
1 ½ teaspoons fine sea salt (or 1 ¾ teaspoons kosher salt)
1 ½ cups (360g) warm water (120 to 130°F)
Instructions
1. Mix the Dough
In a large bowl, combine the flour, instant yeast, and sea salt.
Pour in the warm water and mix with a spoon until it forms a sticky dough. It won’t look smooth, and that’s normal.
2. Let It Rest
Cover the bowl and let it sit at room temperature for 2 to 3 hours, until the dough has doubled and looks slightly bubbly.
3. Shape the Dough
Lightly flour your surface and turn the dough out.
Gently fold it over itself a few times and shape it into a loose ball. No kneading needed.
Let it rest for about 20 to 30 minutes while your oven heats.
4. Preheat Your Dutch Oven
Place your Dutch oven with the lid into the oven and preheat to 450°F.
Let it heat for at least 20 to 30 minutes.
5. Score the Dough
Place the dough on parchment paper and sprinkle flour over the top.
Use a scoring tool or a very sharp knife to make a simple cut across the top. It doesn’t need to be perfect.
6. Bake
Carefully remove the hot Dutch oven.
Place the dough inside, cover, and bake:
30 minutes covered
then remove the lid and bake another 10 to 15 minutes until golden brown
7. Let It Cool
Let the bread cool for at least 20 to 30 minutes before slicing.
