Healthy Carrot Cake Oat Bars (Toddler Friendly, No Refined Sugar)

These are soft, naturally sweet, and easy to throw together. My toddler eats them without even thinking twice about the carrots.

Ingredients

  • 1 ½ cups rolled oats

  • 1 cup finely grated carrots (about 2 medium)

  • 2 ripe bananas (mashed)

  • 1/3 cup maple syrup or honey

  • 1/4 cup milk (any kind)

  • 1/4 cup melted coconut oil (or butter)

  • 1 teaspoon vanilla extract

  • 1 teaspoon cinnamon

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

Optional:

  • 1/4 cup mini chocolate chips

  • 1/4 cup raisins or chopped walnuts

Instructions

1. Preheat

Preheat your oven to 350°F and line an 8x8 pan with parchment paper.

2. Mix Wet Ingredients

In a large bowl, combine:

  • mashed bananas

  • maple syrup

  • milk

  • melted oil

  • vanilla

Mix until smooth.

3. Add Dry Ingredients

Stir in:

  • oats

  • grated carrots

  • cinnamon

  • baking soda

  • baking powder

  • salt

Mix until everything is combined.

4. Add Extras (Optional)

Fold in chocolate chips, raisins, or nuts if you’re using them.

5. Bake

Spread the mixture evenly into your pan.

Bake for: 20–25 minutes

The center should be set and the edges lightly golden.

6. Cool & Slice

Let cool for at least 10–15 minutes before slicing into bars.

Tips That Help

  • Grate carrots finely so they blend in better

  • Use ripe bananas for sweetness

  • Don’t overbake or they’ll dry out

Storage

  • Fridge: 4–5 days

  • Freezer: up to 2 months
